How to sow it
Spinach is a cool-weather crop that bolts the moment it is asked to sit through a hot dry spell, so the two windows that work are spring and late summer. The August–September sowing is the useful one: it stands through autumn and picks over winter in a mild year.
Water it properly. Dry spinach bolts, and bolted spinach is bitter and finished.
